Carob Chewies

Yes, I know. "You hate carob and you can not understand why some people say its better than chocolate and you can always tell the difference and you will never eat it!" Right? If that's the story you are sticking to, you will miss out on a fabulous treat! Some version of this recipe has been around the Wellness Center for a good many years and supposedly under various names. Call them what you want, I prefer to call them "all mine", but no one else let's me get away with it. They are carefully counted and divided and watched with eagle eyes! Simple to make, simply delicious to eat. (If made as directed, each "chewie" contains slightly less than 1tbsp of nuts).

 

Recipe (makes appx 36, if you don't sample as you go)

 

2 cups pecans or walnuts

1/2 cup maple syrup or a little less

1/2 cup carob powder

1/2 cup tahini

3/4 tea sea salt

1 t vanilla or the scrapings from 1/2 of a vanilla bean

Raw unsweetened coconut pulsed fine

 

Process in a food processor until a ball forms. In they seem too stiff add a little water. Roll into 1T size balls. Roll into coconut and or sesame seeds and refrigerate until serving. These can easily be made a day ahead. They might actually keep longer than a day but no one around here can verify that for certain.
