Dick: watched your program on 3abn live today January 02, 2009 and you mentioned a two meal diet of beans, rice, corn, and broccoli. Please expand, what kind of beans what kind of rice, how do you serve all four. and serving amounts of each. I am a member of knoxville tn 1st sda. Previous to joining I had lost alot of weight doing a low fat atkins diet. When I joined 1st sda, I tried go vegan but the starch ruined my dieting. I am overweight again and have syndrone x (z?) symtoms, where my blood sugar hikes from anykind of starch including whole grain drives my hunger through the roof, please respond here and at cmcin1@utk.edu thanks Craig

Hello Craig,
I like many types of beans. My favorites are pinto, red, black, and garbanzo. I use brown rice along with whole wheat tortillas.
As far your blood sugar spikes, my question would be how much do you exercise? That will have a lot to do with the regulation of your blood sugar.
I do not like the Atkins diet, I have found it to be detrimental to people's health. It is trying to help people lose weight, but loses perspective of overall health.

Thanks Dick for your reply, as I have portion control problems, could you give me portion amounts I should eat both for breakfast and lunch. I am thinking in the beginning Iwill eat a third meal for supper or dinner being a salad.

There are a lot of factors to take into consideration. Age, weight, and fitness level are a few of the issues that will affect consumption. I cannot give you an exact. Fortunately, if you eat healthy, it is hard to overeat. If you need exact amounts, I would suggest working with a local doctor or dietician to get the specific amounts for you.
